I would totally take this map into the next official release if you are OK with that.
I also corrected some textures (the walls looked a little blurry) and inserted the items.
If you want to make maps for the official release versions, you can have a debug version of the game, where you can walk through walls and change camera angles and stuff.

Things that doesn't work for viewing atm: NPCs, Items and Apricocoplants (it shows default texture)
But I think those are things that you can script into the level file later on.
Those are the easiest because you can just walk around your map with debug info up and stand on the spots you want and note the coords. Visualizing a load of wall blocks in 3d space is what takes forever for me. I'm going to bed soon so I won't be making more sprites until I get home tomorrow. I am planning to look at screenshots of every gym and identify the missing NPC sprites we'll need and do up sheets for them the game can use. Saruish post here if you do any of those while I'm offline so I know where to start. That was the first 2 gyms by the way.
