Hmm, I'm not sure. With offline saves you used to be able to check their happiness level in party.dat I think, but I haven't had a look at the files of my online save. But I've noticed that most happiness evolutions happen after the happiness level where your pokemon suddenly hugs you and plays around.

The problem with happiness evolutions is that most of them arent very good.
Also they take too long

The hugging stage means it has >200 friendship. Friendship evolutions happen when its >220
Just walk around a bit, level it up some more, and go to the haircut bros when they are open

It is better if you catch a Zubat, because evolution add +5 friendship...

I did catch it as a zubat, in a friend ball at lv 25.

Is it possible for me to hatch a Eevee and get it to evolve into Espeon before lvl 9? Would I have to just walk around a lot with it in the first slot?

Giving your pokemon proteins gives a healthy boost in friendship aswell. You can also increase your pokemons happiness several days a week in the Goldenrod underground & in Pallet town 5 PM - 6 PM when it arrives.

Younger Brother: Sunday, Wednesday, Friday - gives less happiness - 300 cost
