Other than Chatting with other players, Trading with them, and battling them, Compete in the ranks, and the cloud sync of your save, The GTS and Battle spot, ....Etc, not really that much

It is possible to trade with an offline profile on a server that allows offline players. You just need another player that also plays offline.
