Hello guys, I wanted to ask a few things: game updates take place the same day of the week? for each week or when you want it? excuse me but do not want to sound cocky (only to know)
Another thing in the game I have not yet received the mysterious egg to receive what should I do? I have to start the game because it is an older version so I'll have the egg?
Updates typically occur on every Tuesday. If you do not want the update, you do not have to get it. However, I highly recommend downloading the most recent game updates. They add more onto the game and fix bugs that existed in the previous version.
How far are you in your game? If you have version[.21] or a version with the egg implemented, it is possible to edit your save file so that you have the egg, but I do not know how well it will work since I do not know what your current position is. If you chose to do this, go back to one of the first towns you will visit in the game, such as New Bark and then proceed as I describe below:
In order to edit the code go to this location: Pokemon\Save\Red
Pokemon is the main folder for the game and Red should be replaced with the name of your player. Make a copy of the player folder and place it somewhere you can access it. This is so that you can revert your game to the way it was before editing the code if something goes wrong. After you have done this and your character is in New Bark or an early town, open the file titled 'register' in a program such as notepad that will allow for you to edit the code. Do not close the folder. Replace whatever is in the 'register' file with this:

Replace the numbers in 'starter3' and 'elm3' to correspond with the starter you have chosen:
1: Bulbasaur/Chikorita
2: Charmander/Cyndaquil
3: Squirtle/Totodile
Now, save and exit the file. Reopen the folder and open the file titled 'items'
Copy and paste this under any lines that already exist in the folder:
Once you have done this, start your game and check your player's bag. The bag should contain the mystery egg and the game should allow you to give it to Mr. Pokemon and proceed with normal game play assuming you have followed what I have instructed above.

To answer your questions, It is updated weekly, remember that it is only in early beta atm so not everything is in the game yet, and to answer your second question, the egg is one of those things that is not implemented in the game yet, I think it will be implemented in a near future.
As I mentioned before, the egg has been implemented since version [.16] and was working correctly in game play by version [.18].
