I can say Donphan. I know no others.
Unfortunately there isn't a wiki list on it either, so you'll probably need to wait on a little bit of staff insight.

I know of Donphan, ponyta/rapidash, onix, vaporeon, and victribell (I think). Also, all of the pokemon you see in the shop where you get ride are rideable

1) lots of birds are rideable, it's called fly
2) ride is a legit move added to the game to replace the bike.
