Are we supposed to assume that the pokemon you ask for on the daily challenge are based on the easiest difficulty

No
Vade takes the number of likes on the main post(which each person can only do once) and throws it in the RNG
he then takes that number and counts to which person had that number like
he then gives a reply to that person to let them know they won

I always assume the pokemon for the daily trade is going to be a lower level, so I try not to train the ones I (probably) won't use so I don't over shoot the target level

I sometimes boost the level to make you need to train
but I base the levels I choose off of the level it will appear at at difficulty 0
