It's more an opinion than anything else. Breeders specialize in knowing how to work with IV's and how to see what IV's the Pokemon has. If every amateur can work with it, the game would be less fun in my opinion. Don't question it, i don't even know an answer to why.
not really it would be a convenience because you still have to work to get them good, and you don't have to exit the game to go to some website and type the values in. Sure every ameteur could do it but is every ameteur willing to sit their for hours breeding teh perfect IV and then train for the best EVs, no.

Instead of a calculator, he could just show the IV's as well. It just doesn't belong in the game since it's not in the actual games either. Again, opinion.

the grottos werent in the games, the twirl forest and the berry vista were not in the games, does that mean any of them dont belong? no. I am just saying it would be a conveniance to have some npc to tell us what the IVs are, and since you see EV it would not be a bad idea to give an exact number one those as well. but I do not want to get into an arguement that is mostly the devs decision, it would make it easy for noobs but they are just not as willing to put in the time so it would be a conveniance for us either way.

Excuse me? Hidden grotto's were part of generation 5. And you're right about the npc telling about the IV's. But he pops up very late in the game. It's still my opinion, and it sure would be a conveniance, but i'm still against it :)

Anywho, I'm probably not supposed to say this but nilllzz is done with revamping the GUIs of the game including the Pokemon summary screen, It won't show exact numbers but it will have a better indication of the EVs and IVs of your pokemon, and since he is done with remaking it, I don't think we will ever be able to see the actual numbers in the game.

Awesome, sucks I still have to take my ipad out to calculate stuff but oh well. can we get an ETA of the next update?

WHAT HAVE YOU DONE?! Well he did post a tweet about the visuals, but he didn't say what it was about.

Not seeing actual values is not a big deal after all.

With that visual, you can still able to get the exact amount of iv and ev through a screenshot.
I can still measure the length and compute it using math.

What did you want to do with that, guess how much EV's it has? If you guess just not close enough you'll get a different IV for the stat ;)
Not guess, I used F2 to get the photo and use photoshop ruler to measure the length of the bar and then do a bit of math to get the exact EV. Or simply I could just view it without the game :p haha

Best way to train EVs is maximize EV, then use EV decreasing berry which decreases EV by 10 and rise EV by 7 points with simple training to get 252.:p
