So....I just hatched an egg, and when the game asked me to nickname it, I said yes, and I got this instead :

And I picked that apricorn about 2 mins earlier.

If I knew, I would have filled it. I was just riding my pokemon and the egg hatched, I choose Yes to rename my newly hatched pokemon and this is what happened.
All I remember is that I picked a blue apricorn 2 mins before this happened

And you didn't try to recreate this?

Another egg needs about 5000 steps to hatch and that apricorn needs 24 hours to respawn, so........nope I didn't try to recreate this.
It's not a critical bug, I just thought that I have to report it, that's all.

Was just getting sure if you tried and if you succeeded or not. I will try the thing you would try to recreate as well, but with a little save editing trickery, waiting for so long isn't required.
