I'm not sure which games the friendship system is based on, but I know that using vitamins, leveling up, and walking around with it in your party will increase friendship.

the only way is to "talk" to the pokemon following you

There are a few other ways, using the move Return is also a good indication to tell a pokemons friendship. There is also a girl in Goldenrod that will have a look at your first pokemon (in your party) and see what its friendship is at.
